Random Recipe

I found a random recipe on another blog. They had a picture of it and it looks delicious and I like chick peas [randomly just discovered this] so I'm going to try it.


Moroccan Chickpea Stew
2 tsp. olive oil
1 cup onion diced
3/4 cup celery chopped
1/2 cup carrot chopped
1 clove of garlic, minced
2 tsp ground cumin
2 tsp paprika
2 tsp ground turmeric
4 tsp pepper1
4 tsp salt1
8 tsp ground cinnamon
8 tsp ground red pepper
1 1/2 cups water
2 tbsp tomato paste
2 (15.5 oz) chickpea cans
1 (14.5 oz) diced tomato can
2 tbsp fresh cilantro1 tbsp lemon juice

Heat oil in a large saucepan over medium-high heat. Add onion, celery, carrot, and garlic to pan; saute for 5 mins.Stir in cumin, and next 7 ingredients (through red pepper); cook for 1 min, stirring constantly.Add water, tomato paste, chickpeas, and diced tomatoes; bring to a boil.Cover, reduce heat and simmer for 20 mins.Stir in cilantro and lemon juice.
